Armed with fresh corn from the farmer's market and this recipe you will become king or queen of the grill. Twenty minutes in the oven will also do the trick. But "King of the Oven" doesn't sound quite as cool.
6 fresh ears corn in husks
1/2 cup milk
1 tablespoon sugar
4 tablespoons butter, melted
4 tablespoons vodka
2 teaspoon chives, chopped fine
1 tablespoon KGB Sauce (from The Vodka Cookbook) or hot sauce
1 teaspoon dry mustard
1 teaspoon sea salt
2 cloves of garlic, bruised
12 sprigs of fresh rosemary
course salt
- Rinse
each ear of corn, pulling back the husks but leaving intact and attached to
cob.
- Place
in a large pot with 1/2 cup milk, sugar and enough water to cover;
let soak for 2-3 hours.
- Prepare grill or pre-heat
oven to 350°F (177°C).
- In a
small bowl combine olive oil, vodka, chives, hot sauce, dry mustard and sea salt.
- Drain corn Rub from tip to stem with a dampened kitchen towel to remove any remaining corn silk.
- Rub each ear with garlic clove. Then lightly brush each ear with some of the vodka mixture.
- Pull
husks back up over the ears.
As you do, enclose 2 sprigs of rosemary inside each husk between
the husk and the corn. Then
wrap each husk in aluminum foil.
- Grill over medium coals for 15 minutes each side, or bake
in oven for 20 minutes
- Serve immediately with remaining vodka mixture and course salt on the side.
